Jiangnan 江南 - West of Shanghai, near Suzhou

Once the geese reach maturity they are taken to market. As of 2006, it was estimated that 65% of the goose liver needed for the delicacy, foie gras, came from China. The goose has moved from a domestic local market to an international market. While local fishermen may continue to supply local needs, more and more will be supplying major packers and international traders.
